A quick and colorful stir-fry packed with crisp veggies and protein-rich tofu in a savory sauce.

Ingredients

  • 1 block (14 oz) firm tofu, cubed

  • 2 tbsp soy sauce

  • 1 tbsp cornstarch

  • 2 tbsp vegetable oil

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 zucchini, sliced

  • 1 cup broccoli florets

  • 2 cloves garlic, minced

  • 1-inch piece ginger, minced

  • 3 tbsp stir-fry sauce (or teriyaki sauce)

  • 1 tbsp sesame seeds (optional)

Directions

  • In a bowl, toss tofu with soy sauce and cornstarch. Let it sit for 5 minutes.
  • Heat 1 tbsp oil in a pan over medium heat. Cook tofu until golden brown on all sides. Set aside.
  • Add remaining oil to the pan and sauté garlic and ginger for 1 minute.
  • Add bell peppers, zucchini, and broccoli. Stir-fry for 3-4 minutes until slightly tender.
  • Return tofu to the pan and add stir-fry sauce. Cook for another 2 minutes.
  • Sprinkle with sesame seeds and serve hot over rice or noodles.
