Vegetable Stir-Fry with Tofu

Ingredients
1 block (14 oz) firm tofu, cubed
2 tbsp soy sauce
1 tbsp cornstarch
2 tbsp vegetable oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 zucchini, sliced
1 cup broccoli florets
2 cloves garlic, minced
1-inch piece ginger, minced
3 tbsp stir-fry sauce (or teriyaki sauce)
1 tbsp sesame seeds (optional)
Directions
- In a bowl, toss tofu with soy sauce and cornstarch. Let it sit for 5 minutes.
- Heat 1 tbsp oil in a pan over medium heat. Cook tofu until golden brown on all sides. Set aside.
- Add remaining oil to the pan and sauté garlic and ginger for 1 minute.
- Add bell peppers, zucchini, and broccoli. Stir-fry for 3-4 minutes until slightly tender.
- Return tofu to the pan and add stir-fry sauce. Cook for another 2 minutes.
- Sprinkle with sesame seeds and serve hot over rice or noodles.
