A rich and creamy pasta dish with fresh spinach and sautéed mushrooms in a velvety garlic sauce.

Ingredients

  • 12 oz pasta (fettuccine or penne)

  • 2 tbsp olive oil

  • 3 cloves garlic, minced

  • 8 oz mushrooms, sliced

  • 2 cups fresh spinach

  • 1 cup heavy cream (or coconut milk for vegan option)

  • ½ cup grated Parmesan cheese (or nutritional yeast for vegan option)

  • ½ tsp red pepper flakes (optional)

  • Salt & pepper to taste

Directions

  • Cook pasta according to package instructions. Drain and set aside.
  • Heat olive oil in a large pan over medium heat. Sauté garlic and mushrooms for 5 minutes.
  • Add spinach and cook until wilted.
  • Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese, red pepper flakes, salt, and pepper.
  • Add the cooked pasta to the sauce and toss to coat evenly.
  • Serve hot with extra Parmesan on top.
