Ingredients
12 oz pasta (fettuccine or penne)
2 tbsp olive oil
3 cloves garlic, minced
8 oz mushrooms, sliced
2 cups fresh spinach
1 cup heavy cream (or coconut milk for vegan option)
½ cup grated Parmesan cheese (or nutritional yeast for vegan option)
½ tsp red pepper flakes (optional)
Salt & pepper to taste
Directions
- Cook pasta according to package instructions. Drain and set aside.
- Heat olive oil in a large pan over medium heat. Sauté garlic and mushrooms for 5 minutes.
- Add spinach and cook until wilted.
- Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese, red pepper flakes, salt, and pepper.
- Add the cooked pasta to the sauce and toss to coat evenly.
- Serve hot with extra Parmesan on top.
