Ingredients
1 tbsp coconut oil
1 onion, diced
2 cloves garlic, minced
1-inch piece ginger, minced
1 sweet potato, diced
1 can (15 oz) chickpeas, drained and rinsed
1 can (14 oz) diced tomatoes
1 can (14 oz) coconut milk
2 tsp curry powder
1 tsp cumin
½ tsp turmeric
Salt & pepper to taste
Fresh cilantro for garnish
Directions
- Heat coconut oil in a large pan over medium heat. Sauté onion, garlic, and ginger for 2 minutes.
- Add sweet potato and cook for 5 minutes.
- Stir in chickpeas, diced tomatoes, coconut milk, curry powder, cumin, turmeric, salt, and pepper.
- Simmer for 15 minutes until sweet potatoes are tender.
- Serve hot with rice or naan, garnished with fresh cilantro.
