A refreshing and nutritious quinoa salad with cucumbers, tomatoes, feta, and a zesty lemon dressing.

Ingredients

  • 1 cup quinoa, cooked

  • 1 cup cherry tomatoes, halved

  • ½ cucumber, diced

  • ¼ red onion, finely chopped

  • ½ cup feta cheese, crumbled

  • ¼ cup fresh parsley, chopped

  • ¼ cup kalamata olives, sliced

  • 3 tbsp olive oil

  • 1 tbsp lemon juice

  • ½ tsp oregano

  • Salt & pepper to taste

Directions

  • In a large bowl, combine quinoa, tomatoes, cucumber, red onion, feta, parsley, and olives.
  • In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
  • Pour dressing over the salad and toss to combine.
  • Serve chilled or at room temperature.
