A flavorful, spiced curry made with tender potatoes and cauliflower in a fragrant blend of Indian spices.

Ingredients

  • 2 medium potatoes, peeled and cubed

  • 1 small cauliflower, cut into florets

  • 1 onion, chopped

  • 1 tomato, chopped

  • 1 tsp cumin seeds

  • 1/2 tsp turmeric powder

  • 1 tsp garam masala

  • 1/2 tsp ground coriander

  • 1/2 tsp ground cumin

  • 1/4 tsp chili powder (optional)

  • 1 tbsp ginger, grated

  • 2 tbsp vegetable oil

  • Salt to taste

  • Fresh cilantro for garnish

Directions

  • Heat the oil in a large pan over medium heat. Add the cumin seeds and sauté for about 30 seconds until fragrant.
  • Add the chopped onions and sauté until golden. Stir in the grated ginger, turmeric, ground coriander, cumin, garam masala, and chili powder. Cook for 1 minute until the spices are aromatic.
  • Add the potatoes and cauliflower. Stir to coat the vegetables with the spices.
  • Add the chopped tomato and 1/2 cup of water. Cover and cook for about 20 minutes, stirring occasionally, until the potatoes are tender and the cauliflower is cooked through.
  • Season with salt and garnish with fresh cilantro before serving.
