Ingredients
2 medium potatoes, peeled and cubed
1 small cauliflower, cut into florets
1 onion, chopped
1 tomato, chopped
1 tsp cumin seeds
1/2 tsp turmeric powder
1 tsp garam masala
1/2 tsp ground coriander
1/2 tsp ground cumin
1/4 tsp chili powder (optional)
1 tbsp ginger, grated
2 tbsp vegetable oil
Salt to taste
Fresh cilantro for garnish
Directions
- Heat the oil in a large pan over medium heat. Add the cumin seeds and sauté for about 30 seconds until fragrant.
- Add the chopped onions and sauté until golden. Stir in the grated ginger, turmeric, ground coriander, cumin, garam masala, and chili powder. Cook for 1 minute until the spices are aromatic.
- Add the potatoes and cauliflower. Stir to coat the vegetables with the spices.
- Add the chopped tomato and 1/2 cup of water. Cover and cook for about 20 minutes, stirring occasionally, until the potatoes are tender and the cauliflower is cooked through.
- Season with salt and garnish with fresh cilantro before serving.
