A hearty, aromatic curry made with tender chickpeas, sweet potatoes, and warm spices.

Ingredients

  • 1 tbsp coconut oil

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 1-inch piece ginger, minced

  • 1 sweet potato, diced

  • 1 can (15 oz) chickpeas, drained and rinsed

  • 1 can (14 oz) diced tomatoes

  • 1 can (14 oz) coconut milk

  • 2 tsp curry powder

  • 1 tsp cumin

  • ½ tsp turmeric

  • Salt & pepper to taste

  • Fresh cilantro for garnish

Directions

  • Heat coconut oil in a large pan over medium heat. Sauté onion, garlic, and ginger for 2 minutes.
  • Add sweet potato and cook for 5 minutes.
  • Stir in chickpeas, diced tomatoes, coconut milk, curry powder, cumin, turmeric, salt, and pepper.
  • Simmer for 15 minutes until sweet potatoes are tender.
  • Serve hot with rice or naan, garnished with fresh cilantro.
