Ingredients
1 cup quinoa, cooked
1 cup cherry tomatoes, halved
½ cucumber, diced
¼ red onion, finely chopped
½ cup feta cheese, crumbled
¼ cup fresh parsley, chopped
¼ cup kalamata olives, sliced
3 tbsp olive oil
1 tbsp lemon juice
½ tsp oregano
Salt & pepper to taste
Directions
- In a large bowl, combine quinoa, tomatoes, cucumber, red onion, feta, parsley, and olives.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
- Pour dressing over the salad and toss to combine.
- Serve chilled or at room temperature.
