Ingredients
1 cup whole wheat flour
1 tsp baking powder
½ tsp salt
¾ cup milk
1 egg
½ cup fresh spinach, chopped
¼ cup crumbled feta cheese
1 tbsp olive oil (for cooking)
Directions
- In a bowl, mix flour, baking powder, and salt.
- In another bowl, whisk milk and egg, then add to the dry ingredients.
- Stir in chopped spinach and feta cheese.
- Heat a pan with a little olive oil. Pour small portions of batter to form pancakes.
- Cook for 2-3 minutes per side until golden brown. Serve warm.
